EXTRA PRICKLY PEAR JAM
Extra Prickly Pear Jam captures the fragrance and essence of Sicily. The cultivation of prickly pear, one of the island’s most traditional fruits, has Asian origins. To prepare our extra jam, we select second-flowering prickly pears, known as “bastardoni,” whose fruits are briefly cooked and then deseeded. The resulting purée is mixed with sugar, a small amount of pectin, and fresh lemon juice from the Femminello Siracusano variety. The color of the jam varies depending on the type of fruit used: deep red with the “sanguigna” variety, yellow-orange with the “sulfarina,” and white with the “muscaredda.”
Excellent enjoyed on toasted bread or paired with aged cheeses.
