The color of the fig ranges from green, with a soft fruit and thin skin, to purple, which makes the fig particularly delicate and sweet, and finally to black-purple, with dry and sugary pulp. To prepare our Extra Fig Jam, the fruits are processed by hand within a few hours of harvest, as they are very delicate and perishable, following an artisanal process. The figs are cooked in a pot with the addition of sugar. Fresh lemon juice from the Femminello Siracusano variety is then added.

To prepare our extra jam, we select second-flowering prickly pears, known as “bastardoni,” whose fruits are briefly cooked and then deseeded. The resulting purée is mixed with sugar, a small amount of pectin, and fresh lemon juice from the Femminello Siracusano variety. The color of the jam varies depending on the type of fruit used: deep red with the “sanguigna” variety, yellow-orange with the “sulfarina,” and white with the “muscaredda.”
